In the Saint Claire Convent, the documentation of the 18th century talk about the buy of some covers for the “torteras” (utensils that were used to make “mantecados”). The origin of the production of these delicious Christmas cakes in Estepa is due to Filomena Micaela Téllez. Her husband, Manuel Fernández Tenllado distributed the delicious cakes, which were cooked by his wife, in the nearby villages and cities. This is how the first family company dedicated to the mantecados production and commercialization emerged. During the course of the first half of the 20th century there were almost 300 “mantecados” and “polvorones” factories (the great majority of them were family companies). Actually, the technology more advanced is wisely combined with the tradition of the ancient recipes belonging to our ancestors.
The merger of many family companies have yielded to a sector more industrialized exporting to nationwide and worldwide. This ancient town is plenty of aromas every autumn.

Some historians tell that the origin of the “tapa” is located in the province of Cádiz, specifically, on the way to San Fernando, where is the Venta del Gato that is the place where the King Fernando VII of Spain used to stop to eat and have a rest.
